I don’t know what to call this, but it’s the salad that my husband makes for us almost every weeknight, and it’s better than any salads I’ve had anywhere. I think the secret is all the stuff that’s in there and the home made dressing. Make it (especially the wet seasoning) right before eating so it doesn’t get mushy.
Hubby Salad
Ingredients (serves 2 people for dinner)
Butter lettuce – 2 bags
Avocado – 1
Bell peppers – 1 (we like red or yellow peppers for taste and look)
Onion – 1/2 (we like red onion)
Turkey – 1 bag (we like Applegate herb turkey breast)
Corn – 3/4 cup (we use frozen and sautee in olive oil)
Beets – 1 box / 8 oz (pre steamed and peeled)
Generous amount of cheese (we like mix of parmesan, romano and asiago)
Fresh cilantro – 8 tablespoons chopped
Fresh thyme – 1 tablespoon chopped
Dried Basil, Dried Oregano – 3/4 tablespoon each
Cumin – 1/2 teaspoon
Balsamic vinegar – 3 tablespoon (equal part vinegar and oil)
olive oil – 2 tablespoon
truffle oil – 1 tablespoon
Mayo – 1.5 tablespoon
Salt and pepper – to taste
Optional: grilled/roasted vegetables, jalapeno
Directions: Chop all ingredients and mix in seasoning.
