
This recipe perfectly replicates how sweet potatoes taste like when you get them from the street carts in Korea or Japan, all in the comfort of your own home, with no special ingredients.
All you need is Japanese sweet potatoes (other varieties do not taste the same). If the sweet potatoes are much larger than your palm, add a bit of baking time in total.
- Preheat oven to 375F.
- Cut off the top and bottom of the sweet potato.
- Bake for 20 minutes, using a cooling rack on top of an oven tray*.
- Remove and dunk sweet potatoes in ice water for 2 minutes.
- Bake for another 25 minutes.
Enjoy! This is best hot out of the oven.
*I highly recommend this brand of oven tray, coated with ceramic, which is non stick and easy to clean. There is no need to use parchment paper or aluminium foil, so there is no toxin or metal leaked into the food.
